simple fritters that we usually eat with pinto beans,, or fried chicken. I also like them with a bowl of chili

Ingredients
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 egg
  • 1/2 cup milk
  • 2 cups canned cream style corn
  • 1 10 oz package frozen corn- thawed
  • several grindings of fresh pepper to taste
  • vegetable oil for frying

Directions
  1. In medium bowl, sift together flour, baking powder, and salt.
  2. Add remainig ingredients except oil. Mix well
  3. Add cooking oil to deep skillet about 1" in depth and heat until a drop of water sprinkled in it sizzles.
  4. Drop tablespoonfuls of the batter into hot oil.
  5. Fry 2 to 3 minutes or until golden brown,, may need to carefull turn midway thru cooking
  6. Fry no more than 4 to 6 at a time.
  7. remove with slotted spoon and drain.
  8. enjoy

I haven't had corn Fritters in years. Actually, I had only tried them once before. I thought they were an ok side-dish, then. Decided to try making them last night, using this recipe. Basically whenever it is my turn to cook, we always have steamed corn as a side-dish because I love corn. Last night, I wanted to try something different. You know, kinda mix things up. Used this recipe, and Corn Fritters are now one of my favorite side dishes.
