Ingredients
  • *SOFRITO*
  • 1- large onion
  • 1- large green pepper
  • palmful of fresh cilantro
  • 2-3 big cloves of garlic
  • Goya culantro (2 big spoonfulls,its in a jar)
  • onion salt&powder
  • garlic powder
  • pepper
  • Badia Complete seasoning (green top)
  • Goya Adobo all purpose seasoning (red top)
  • *RICE*
  • -3 cups of long grain rice
  • -Canola Oil (so rice doesnt stick)
  • -4.5 cups of water
  • -2 cans of small Goya tomato sauce(preferrable garlic&onion flavor)
  • -2 packets of Goya Sazon (make sure to use)sazon con culantro y achiote...usually has the yellow band on the top of the box (when u open the packet,it should be a bright orange)
  • -*optional* 2 spoonfulls of Goya green olives
  • -*optional*small bite size pieces of uncooked bacon(handful?)
  • *BEANS*
  • Big can of Goya Kidney beans (red)
  • half can of water
  • 1-2 small potatoes (peeled and diced in bite size pieces)
  • 1 pck of Sazon(sazon con culantro y achiote)
  • Last 5 seasonings in the sofrito ingredients
  • 1 clove garlic diced
  • spoonful of Goya culantro
  • *CHICKEN*
  • 4 pieces of boneless skinless chicken
  • fill half pan of water to boil the chicken
  • 1-2 packets of Goya Sazon (sazon con culantro y achiote)
  • onion salt&powder
  • garlic powder
  • pepper
  • Badia Complete seasoning (green top)
  • Goya Adobo all purpose seasoning (red top
  • *optional-u can throw a spoonful of the Goya culantro in the water

Directions
  1. For "chicken" get a pot and fill it half way of water and put in the rest of the chicken ingredients..put on high heat for a boil to cook chicken thoroughly!!!!
  2. In a blender or food processor put all the ingredients under the *SOFRITO* list,I never measure so as far as the powder seasoning Im going to say a 2 second shake(1/2-1 Tb)???u should come up with a very green runny consistency.
  3. Ok in a large thick metal pot (this is important or u will get burnt rice at the bottom of the pot,which i love,but some dont like it)fill your pot with the oil,water,tomato sauce,ur Sazon packets,and the SOFRITO u had jus blended up,Bring all to a boil...
  4. MmMm Its smelling great once its at a boil,put ur rice inside (and ur green olives and bacon if u like)do a quick stir to make sure its all in there.
  5. Then COVER ur pot and turn ur high heat down to a medium low heat
  6. In a medium sauce pan empty ur can of red Kidney beans,using same can fill lil less or more (depends how much juice u like) with water, stir and pour water in sauce pan
  7. throw the rest of the "bean" ingredients inside sauce pan
  8. bring to boil
  9. once its boiling,reduce to medium heat,cover if u like
  10. With the yellow rice,you DONT want to stir to often,because then it will turn into a mushy mexican rice instead of a fluffy puerto rican rice.U dont want to stir more then maybe 3-4 times(takes about 25-30 minutes to fully cook)
  11. When u stir make sure to scoop it away from the sides of the pot and flip the rice from the bottom to the top each stir...
  12. U will know when ur rice is done,when it doesnt have any crunch its moist and just soft not mushy
  13. Ur beans will be done when ur potatoes are done(normally 15-20 minutes,turn on low heat just to keep em warm if finishes before other components)
  14. Ur chicken will be done when its not pink on the inside,haha
  15. When everything is done to perfection,this is how u serve...
  16. Get ur favorite plate,put a BIG spoonfull of ur yellow puerto rican rice down,pour ur beans over the bed of rice,and add a lil more of the extra juice (dont be scared haha) and then lay ur piece of chicken on the side....WAALA...you just made puerto rican rice and beans... one of the two kinds that I love

I love this recipe.. Very well thought out.. Thanks for posting it. I also love the sofrito. I used Sazon spices for a lot of my recipes.I will try this for sure. High five.. Jim
