Ingredients
  • 1/2 pkg. Tortellini
  • 1/2 stick butter
  • 1 clove garlic, chopped fine
  • 1 tsp. parsley
  • 1/4 cup fresh basil, chopped
  • 1/2 cup light cream
  • 1/3 cup mayonnaise
  • 1 egg yolk, beaten
  • 1/4 cup grated Parmesan Cheese
  • Salt and Pepper to taste
  • 1/3 cup Prosciutto, minced

Directions
  1. In a frying pn, melt butter.
  2. Add garlic, parsley and basil.Saute on low.
  3. In small bowl combine cream, mayonnaise, egg, cheese, salt and pepper.
  4. Add to frying pan with minced proscuitto.
  5. Cook for 5 to 10 minutes on low stirring constantly.
  6. Be careful not to curdle.
  7. Toss with cooked and drained Tortellini.

Sounds yummy! I find that warming the cream before you add it to a simmering dish reduces the curdling.
