Pollo Con Arroz De El Bolillo Recipe

Ingredients
  • 1 lb chicken, cooked, and chopped in bite-size chunks
  • 3 TBS extra virgin olive oil
  • 1 orange bell pepper
  • 1 medium sweet onion
  • 1 large tomato, chopped
  • 3 cloves garlic, minced
  • 2 cups cooked black beans
  • 2 cups brown rice
  • 4 cups chicken broth
  • 1 TBSP crushed red pepper
  • 2 TBSP cilantro
  • lime juice(to taste)

Directions
  1. Heat oil in medium-large sauce pan
  2. Add veggies and garlic, but not beans, and stir
  3. Heat until onion is translucent(about halfway done), then add black beans and cook until the Chopped peppers are soft
  4. Add brown rice and cook in oil and veggies for about 2 minutes
  5. Add chicken, stock, pepper, cilantro,and lime juice, stir thoroughly into rice/veggie mixture
  6. Bring to a boil, then stir and reduce heat
  7. Cover and simmer until most of water is gone, stirring occasionally(about 30 minutes)
  8. If you feel like theres not enough "ummphh", add some more lime or pepper now.
  9. Thats it, your ready to enjoy some grinofied comida
