chickpea soup garbanzo beans

- 1 package approx. 2 cup dried chickpeas shopping list
- 1 lb ground lamb or other meat.... shopping list
- 1 medium onion finely chopped.... shopping list
- ½ cup celery chopped.... shopping list
- 2 sprigs fresh rosemary finely ground about 2 teaspoons..... shopping list
- 6 cloves garlic, finely minced shopping list
- 1 tablespoon tomato paste or 4 tablespoons of .... shopping list
- tomato sauce..... shopping list
- 6 cups chicken broth shopping list
- salt and freshly ground black pepper to taste shopping list
- 5 tablespoons extra virgin olive oil .... shopping list
How to make it
- Put the dried chickpeas in a bowl, add cold water to cover, and let soak overnight.
- ..
- Directions:
- In pressure cooker saute in 5 tablespoons olive oil ½ cup celery, 1 medium onion about 5 minutes.
- Add 1 lb of ground lamb brown.
- Add the rosemary and garlic, chicken broth, tomato sauce or paste.
- Add more water to make sure chickpeas are under water if necessary. Do not fill pot more than ¾ full. Bring to a boil.
- Put on lid and cook until the chickpeas are just tender, about 20 minutes. Turn off heat.
- After it is safe remove lid.
- Remove 1 cup of soup and mix in a blender til chickpeas are smooth. Put it back into the pot and stir. Season with salt and pepper. ....
