Chickpea Soup Garbanzo Beans Recipe
This soup can be modified by using different meat, adding pasta is optional. Adding more liquid for a less creamy soup is optional.

Ingredients
  • 1 package approx. 2 cup dried chickpeas
  • 1 lb ground lamb or other meat....
  • 1 medium onion finely chopped....
  • ½ cup celery chopped....
  • 2 sprigs fresh rosemary finely ground about 2 teaspoons.....
  • 6 cloves garlic, finely minced
  • 1 tablespoon tomato paste or 4 tablespoons of ....
  • Tomato sauce.....
  • 6 cups chicken broth
  • Salt and freshly ground black pepper to taste
  • 5 tablespoons Extra Virgin Olive Oil ....

Directions
  1. Put the dried chickpeas in a bowl, add cold water to cover, and let soak overnight.
  2. ..

  4. In pressure cooker saute in 5 tablespoons olive oil ½ cup celery, 1 medium onion about 5 minutes.
  5. Add 1 lb of ground lamb brown.
  6. Add the rosemary and garlic, chicken broth, tomato sauce or paste.
  7. Add more water to make sure chickpeas are under water if necessary. Do not fill pot more than ¾ full. Bring to a boil.
  8. Put on lid and cook until the chickpeas are just tender, about 20 minutes. Turn off heat.
  9. After it is safe remove lid.
  10. Remove 1 cup of soup and mix in a blender til chickpeas are smooth. Put it back into the pot and stir. Season with salt and pepper. ....
