Tomato Pudding Ala Red Fox Inn Recipe
Easy side dish that is great paired with a roasted meat. Mom made it along with her baked chicken and it was always delightful.

Ingredients
  • 2 6 oz cans of tomato paste
  • 1 46 oz can of V-8 or tomato juice
  • 1 scant teaspoon of salt
  • 2 cups of brown sugar
  • 14 slices of white bread, cubed
  • 1 cup of melted butter

Directions
  1. Boil tomato paste, juice and salt for five minutes.
  2. Add sugar and stir until dissolved.
  3. Place cubed bread in a 13 x 9 baking dish.
  4. Pour butter over the top.
  5. Add tomato mixture and bake uncovered for one hour.
  6. May be frozen and reheated.

This looks so good! I LOVE tomatoes! I will definately try this. I might add some cheddar for the last 5 minutes of baking. Thanks for the recipe!


I want to make this so badly, but I'm low carbing these days and I can't have it....yum!


My dad would have loved this , but my family thinks I'm nuts evey time I mention tomato pudding. I may try half a recipe and tell them its something else. Thaanks.
