How to make it

  • Thaw fish if frozen. Set aside.
  • Heat oven to 375. Line baking pan with foil and spray foil.
  • Slice mushrooms and shred cheese.
  • Toss vegetables with salt; spread in pan.
  • Place fillets on top of spinach.
  • In a saucepan, combine milk, cheese, nutmeg and pepper. Cook and stir over low heat until cheese is melted.
  • Pour sauce over fish; sprinkle with paprika.
  • Cover dish with foil and bake 40-45 minutes.
  • Or you may cook it in the microwave:
  • Cover with vented microwave-safe plastic wrap. Cook on 70% power (medium-high) for 8-9 minutes, giving dish a half-turn after 4 minutes.

    Oh that sounds creamy and so good, sweetwords - and so nice to see a post with your name attached! I have to try this - love spinach, and the cheese sauce topper with the fish has got to be sublime...thnks!!
