We love spinach, and this turned out very nice, an elegant recipe.

Ingredients
  • 1 lb flounder or sole fillets
  • 6oz fresh mushrooms
  • ½C Swiss cheese (2oz)
  • 16oz frozen spinach
  • 1 T pimiento
  • Dash salt
  • 6oz (3/4C) evaporated milk
  • 1/4 scant tsp ground nutmeg
  • Black pepper to taste
  • Dash paprika

Directions
  1. Thaw fish if frozen. Set aside.
  2. Heat oven to 375. Line baking pan with foil and spray foil.
  3. Slice mushrooms and shred cheese.
  4. Toss vegetables with salt; spread in pan.
  5. Place fillets on top of spinach.
  6. In a saucepan, combine milk, cheese, nutmeg and pepper. Cook and stir over low heat until cheese is melted.
  7. Pour sauce over fish; sprinkle with paprika.
  8. Cover dish with foil and bake 40-45 minutes.
  9. Or you may cook it in the microwave:
  10. Cover with vented microwave-safe plastic wrap. Cook on 70% power (medium-high) for 8-9 minutes, giving dish a half-turn after 4 minutes.
