Flounder Florentine

- 1 lb flounder or sole fillets shopping list
- 6oz fresh mushrooms shopping list
- ½C swiss cheese (2oz) shopping list
- 16oz frozen spinach shopping list
- 1 T pimiento shopping list
- Dash salt shopping list
- 6oz (3/4C) evaporated milk shopping list
- 1/4 scant tsp ground nutmeg shopping list
- black pepper to taste shopping list
- Dash paprika shopping list
How to make it
- Thaw fish if frozen. Set aside.
- Heat oven to 375. Line baking pan with foil and spray foil.
- Slice mushrooms and shred cheese.
- Toss vegetables with salt; spread in pan.
- Place fillets on top of spinach.
- In a saucepan, combine milk, cheese, nutmeg and pepper. Cook and stir over low heat until cheese is melted.
- Pour sauce over fish; sprinkle with paprika.
- Cover dish with foil and bake 40-45 minutes.
- Or you may cook it in the microwave:
- Cover with vented microwave-safe plastic wrap. Cook on 70% power (medium-high) for 8-9 minutes, giving dish a half-turn after 4 minutes.
