Lucybelles Nopales Recipe
Great as a side dish or my favorite, wrapped up in a tortilla.

Ingredients
  • One large jar of prepared nopales (Dona Maria is my favorite)
  • One pound pork stew meat, cubed up into bite-size bits. If you don't like pork then use beef or possibly chicken. Also just as yummie without any meat at all.
  • One jar of your favorite salsa
  • A little fresh minced garlic to taste (I like a little more than a little!)

Directions
  1. Start with about 1/4 cup of water in a pot, add the pork and salt.
  2. Simmer on low untl the pork is nearly cooked thru, maybe 30 to 45 minutes.
  3. While the pork is cooking, dump the nopales out into a colander and rinse well. Nopales are kinda slimy like okra but the Dona Maria brand are not so bad.
  4. Once the pork is nearly cooked, add in the nopales and salsa and simmer another 30 minutes
  5. Dig in!

Nopales is cactus. My ex-husband's grampa called it "Mexican Green Beans" :) Very yummie
