Steak Margarita With Onions And Spinach Recipe

Ingredients

4 NY or ribeye steaks, brought to room temperature

1 t. crushed garlic

½ t. Kosher salt

3 T. chili powder

2 T. dark brown sugar

2 T. reposado tequila

3 T. lime juice

Olive oil spray

2 medium red onions, chopped

8 oz spinach, rinsed

¼ t. salt

½ t. crushed red pepper

1 t. crushed garlic

½ t. fennel seeds

Olive oil for sautéing

Directions

Rinse and pat steaks dry. Bring to room temperature.

Make a paste of the garlic, salt, chili powder, sugar, tequila and lime juice. Put on both sides of steaks. Spray with olive oil spray on one side. Cook on a hot grill pan with sprayed side down until seared. Cover other side with spray. Turn and cook until rare. Turn off heat and cover grill pan and allow to sit 1-2 minutes for medium rare.

In another pan, heat olive oil with salt, red pepper, garlic and fennel seed. Saute onions until soft. Add spinach and sauté about 1 minute, stirring constantly.

Serve steaks on bed of onion and spinach.
