Steak Margarita with Onions and Spinach

- 4 NY or ribeye steaks, brought to room temperature shopping list
- 1 t. crushed garlic shopping list
- ½ t. kosher salt shopping list
- 3 T. chili powder shopping list
- 2 T. dark brown sugar shopping list
- 2 T. reposado tequila shopping list
- 3 T. lime juice shopping list
- olive oil spray shopping list
- 2 medium red onions, chopped shopping list
- 8 oz spinach, rinsed shopping list
- ¼ t. salt shopping list
- ½ t. crushed red pepper shopping list
- 1 t. crushed garlic shopping list
- ½ t. fennel seeds shopping list
- olive oil for sautéing shopping list
How to make it
- Rinse and pat steaks dry. Bring to room temperature.
- Make a paste of the garlic, salt, chili powder, sugar, tequila and lime juice. Put on both sides of steaks. Spray with olive oil spray on one side. Cook on a hot grill pan with sprayed side down until seared. Cover other side with spray. Turn and cook until rare. Turn off heat and cover grill pan and allow to sit 1-2 minutes for medium rare.
- In another pan, heat olive oil with salt, red pepper, garlic and fennel seed. Saute onions until soft. Add spinach and sauté about 1 minute, stirring constantly.
- Serve steaks on bed of onion and spinach.
