How to make it

  • Rinse and pat steaks dry. Bring to room temperature.
  • Make a paste of the garlic, salt, chili powder, sugar, tequila and lime juice. Put on both sides of steaks. Spray with olive oil spray on one side. Cook on a hot grill pan with sprayed side down until seared. Cover other side with spray. Turn and cook until rare. Turn off heat and cover grill pan and allow to sit 1-2 minutes for medium rare.
  • In another pan, heat olive oil with salt, red pepper, garlic and fennel seed. Saute onions until soft. Add spinach and sauté about 1 minute, stirring constantly.
  • Serve steaks on bed of onion and spinach.

    Wonderful idea! I'm a noob and never thought of creating a paste instead of a dry rub. I'll be trying out your technique soon. There are a couple of filet's in the fridge after all.
