Mexican Cornbread

- 1 cup yellow cornmeal shopping list
- 1/2 cup bacon drippings shopping list
- 2 eggs beaten well shopping list
- 3/4 teaspoon salt shopping list
- 1 cup milk shopping list
- 1/2 teaspoon baking soda shopping list
- 1 can creamed corn shopping list
- 1 pound lean ground beef shopping list
- 2 pounds sharp cheddar cheese grated shopping list
- 1 medium white onion chopped shopping list
- 1 jalapeno pepper chopped shopping list
How to make it
- Combine cornmeal, drippings, eggs, salt, milk, baking soda and corn then set aside.
- Sauté ground meat and onion.
- Grease and heat a large black iron pot or any pot that can go in the oven.
- Sprinkle a thin layer of cornmeal and let brown slightly.
- Pour 1/2 batter in pot then add meat, onions and pepper.
- Put cheese and then the remaining batter over top and bake at 350 for 45 minutes.
