Mexican Cornbread Recipe
This is an awesome cornbread with so many great flavors going on. I like to make this and eat it alongside Corn Chowder which I just had for lunch today. Yummy. Enjoy

Ingredients
  • 1 cup yellow cornmeal
  • 1/2 cup bacon drippings
  • 2 eggs beaten well
  • 3/4 teaspoon salt
  • 1 cup milk
  • 1/2 teaspoon baking soda
  • 1 can creamed corn
  • 1 pound lean ground beef
  • 2 pounds sharp cheddar cheese grated
  • 1 medium white onion chopped
  • 1 jalapeno pepper chopped

Directions
  1. Combine cornmeal, drippings, eggs, salt, milk, baking soda and corn then set aside.
  2. Sauté ground meat and onion.
  3. Grease and heat a large black iron pot or any pot that can go in the oven.
  4. Sprinkle a thin layer of cornmeal and let brown slightly.
  5. Pour 1/2 batter in pot then add meat, onions and pepper.
  6. Put cheese and then the remaining batter over top and bake at 350 for 45 minutes.
