How to make it

  • bring red curry paste and coconut milk to a slow boil, stirring until blended (med high heat)
  • add fish sauce, brown sugar, and lime juice and reduce heat to meduim
  • add sliced vegetables and simmer until vegetable are soft, but not soggy (20 min)
  • add shrimp and simmer 5 min.
  • Serve over cooked rice
  • add fresh cilantro and lime wedges as an option
