Thai Shrimp Red Curry

- 2 Tbs of Thai red curry paste shopping list
- 2 cans (14 oz each) light coconut milk shopping list
- 2 tsp of fish sauce shopping list
- 5 Tbs of brown sugar shopping list
- 2 tsp of lime juice shopping list
- 1 zuccini shopping list
- 1 yellow squash shopping list
- 1 red bell pepper shopping list
- 1 # of shrimp shopping list
- 1 cup of rice shopping list
How to make it
- bring red curry paste and coconut milk to a slow boil, stirring until blended (med high heat)
- add fish sauce, brown sugar, and lime juice and reduce heat to meduim
- add sliced vegetables and simmer until vegetable are soft, but not soggy (20 min)
- add shrimp and simmer 5 min.
- Serve over cooked rice
- add fresh cilantro and lime wedges as an option
