Black Eyed Pea Cakes Recipe
I make these as a side dish to go with fried fish, hushpuppies and cole slaw but would also be good with fried chicken too.

Ingredients
  • 1 can of your favorite black-eyed peas, drained
  • 4 strip of precooked bacon, prepared and crumbled
  • 3/4 of one (jarred) whole fire roasted red pepper , chopped
  • enough flour to make the mixture bind together to make the little “cakes”
  • 1 tbspn butter
  • olive oil

Directions
  1. In a medium bowl, coarsely mash beans with a fork, add bacon and fire roasted peppers to mixture.
  2. Add just enough flour to mixture to help bind.
  3. Season with salt and pepper.
  4. Shape pea mixture into patties ( I made five).
  5. Melt butter and oil together in a skillet over medium heat.
  6. Add patties and brown on both sides until crispy.

Precisely what I do with my leftover black eyed peas....make fried patties with them. My momma used to fry her leftover mashed and then we branched out to mashing the peas and adding a bit more onion and frying them up. They are quite good topped with a poached egg and a side salad of greens with a vinegar dressing.


I had blackeye peas today with my pork loin and have left overs. This will be great. I cant eat them but my family can.


I saw this recipe a long time ago and forgot to bookmark it. Thanks for sharing.
