hot spinach pasta

- 250 g spinach shopping list
- 1 clove of garliic shopping list
- 1/2 to 1 red hot chili shopping list
- 120 g ground seasoned pork (called 'Mett' in Germany,butchers have it ready, it is sasoned with pepper and salt) shopping list
- 3 TBSP olive oil shopping list
- 50 ml white wine shopping list
- 100 ml heavy cream shopping list
- 150 g spaghetti or spaghettini shopping list
- salt, pepper, nutmeg, shopping list
- 1 to 2 tsp. freshly grated bio-lemon rind shopping list
- 50 g freshly grated Pecorino shopping list
How to make it
- if you have frozen spinach, thaw and press to remove liquid
- when using fresh, wash, clean and pat dry
- finely chop chili and garlic,
- put olive oil in frying pan, adding meat, garlic and chili,
- stirring continuously
- add wine and cream
- cook until of a creamy consistency
- meantime, cook pasta in salted water according to directions
- save 150 ml of cooking water when draining pasta
- add pasta water and spinach to pan,
- let cook until most of water has been reduced
- season with pepper, salt, nutmeg and
- the freshly grated lemon rind.
- DO NOT USE THE PACKED KIND
- add pasta, using two forks two mix pasta and sauce
- serve on pre-heated pasta plates,
- sprinkle with lots of freshly grated Pecorino.
- enjoy with a nice glass of wine...or two....
