Hot Spinach Pasta Recipe

Ingredients

250 g spinach

1 clove of garliic

1/2 to 1 red hot chili

120 g ground seasoned pork (called 'Mett' in Germany,butchers have it ready, it is sasoned with pepper and salt)

3 TBSP olive oil

50 ml white wine

100 ml heavy cream

150 g spaghetti or spaghettini

salt, pepper, nutmeg,

1 to 2 tsp. freshly grated bio-lemon rind

50 g freshly grated Pecorino

Directions

if you have frozen spinach, thaw and press to remove liquid

when using fresh, wash, clean and pat dry

finely chop chili and garlic,

put olive oil in frying pan, adding meat, garlic and chili,

stirring continuously

add wine and cream

cook until of a creamy consistency

meantime, cook pasta in salted water according to directions

save 150 ml of cooking water when draining pasta

add pasta water and spinach to pan,

let cook until most of water has been reduced

season with pepper, salt, nutmeg and

the freshly grated lemon rind.

DO NOT USE THE PACKED KIND

add pasta, using two forks two mix pasta and sauce

serve on pre-heated pasta plates,

sprinkle with lots of freshly grated Pecorino.

enjoy with a nice glass of wine...or two....
