How to make it

  • if you have frozen spinach, thaw and press to remove liquid
  • when using fresh, wash, clean and pat dry
  • finely chop chili and garlic,
  • put olive oil in frying pan, adding meat, garlic and chili,
  • stirring continuously
  • add wine and cream
  • cook until of a creamy consistency
  • meantime, cook pasta in salted water according to directions
  • save 150 ml of cooking water when draining pasta
  • add pasta water and spinach to pan,
  • let cook until most of water has been reduced
  • season with pepper, salt, nutmeg and
  • the freshly grated lemon rind.
  • DO NOT USE THE PACKED KIND
  • add pasta, using two forks two mix pasta and sauce
  • serve on pre-heated pasta plates,
  • sprinkle with lots of freshly grated Pecorino.
  • enjoy with a nice glass of wine...or two....

    If it passes the Grandson test,then it has to be pretty good.
