  • 1 cup milk
  • 1 1/4 cups fine dry bread crumbs
  • 2 large eggs, fork beaten
  • 1 1/4 cups chopped onion
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground allspice
  • 1 1/2 pounds beef
  • 1/2 pound pork (or more beef, your choice)
  • 1/4 cup all purpose flour
  • 1/2 teaspoon salt
  • 10 ounces condensed beef consomme
  • 1 cup water

Directions
  1. Mix first seven ingredients in a bowl. Stir well.
  2. Add ground beef and ground pork. Shape in to 1 1/2 inch balls, arranging on broiler tray. They may be placed quite close together. I leave one row open at the end to allow for turning.
  3. Brown quickly under broiler, turning once.
  4. If you are cooking right away, pile balls in to five quart slow cooker. Otherwise, spread meatballs in a single layer inside a large ziploc bag. Date the bag and freeze.
  5. For the sauce, measure flour and salt in saucepan. Whisk in consomme and water gradually until no lumps remain. Heat until it boils and thickens a bit. Pour over meatballs. Cover. Cook on low for 8 to 10 hours or on high for 4 to 5 hours. Makes 57 meatballs.

Alterations


Instead of the sauce listed above, you may warm the meatballs for about thirty minutes in sphagetti sauce, either store bought our your own creation.


Instead of meatballs, you may scoop 1/4 cupfuls of mixture on to Press-N-Seal (c) plastic wrap. Cover with more Press-N-Seal, and seal the edges. Flatten the burgers with the back of a plate. Date the pack and freeze for later use.


For mexicali meatloaf, add salsa (1/4 cup) and cumin (1/2 teaspoon) to two cups meat mixture and pack in to a disposable aluminum loaf pan. Seal the pan with more aluminum foil, date the package, and freeze. Bake from frozen, 1 1/2 hour at 350 degrees.
