Mexican Soup

- 2 tablespoons butter shopping list
- 1 cup chopped yellow onion shopping list
- 2 cups chicken broth shopping list
- 14 ounce can tomatoes mashed shopping list
- 4 ounce can chopped green chilies with juice shopping list
- 4 ounces pepper jack cheese shopping list
- parsley for garnish shopping list
How to make it
- Put butter and onion into saucepan then sauté until onion is clear and soft.
- Add chicken broth, tomatoes and green chilies then simmer to blend flavors.
- Cut in cheese then stir to melt and garnish with sprigs of parsley.

Yum, I do something similar but instead of tomatoes dump in a jar of salsa and a can of beans or refried beans. Excellent!
