Mexican Soup Recipe
This is an incredibly easy soup to make but so good on taste. Especially good on a cold night when you want something to warm you up. Enjoy

Ingredients
  • 2 tablespoons butter
  • 1 cup chopped yellow onion
  • 2 cups chicken broth
  • 14 ounce can tomatoes mashed
  • 4 ounce can chopped green chilies with juice
  • 4 ounces pepper jack cheese
  • Parsley for garnish

Directions
  1. Put butter and onion into saucepan then sauté until onion is clear and soft.
  2. Add chicken broth, tomatoes and green chilies then simmer to blend flavors.
  3. Cut in cheese then stir to melt and garnish with sprigs of parsley.

Yum, I do something similar but instead of tomatoes dump in a jar of salsa and a can of beans or refried beans. Excellent!


This is a definate...My youngest and I love "hot" cheese as she calls pepper jack so I can't wait to try this with her. Thank you for the share!
