Chicken A-la Goff

- 1/3 cup olive oil shopping list
- 2-2 1/2 pounds boneless skinless chicken breast, butterflied then sliced in half shopping list
- 1 (16 oz) pkg skinless keilbasa, cut lenthwise in half then sliced into 1/2 inch pieces shopping list
- 1/2 cup marsala cooking wine shopping list
- 1 (26 1/2 oz) can Del Monte Traditional spaghetti sauce shopping list
- 1 (12oz) pkg fresh broccoli florets shopping list
- 1 red bell pepper, seeded and sliced into 3/4 inch strips shopping list
- 3 large scallions, cut stems off, peeled and cut into half chunks shopping list
- cooked rice shopping list
How to make it
- In a large cooking pot on the stove top, heat olive oil on medium-high. Add sliced chicken breasts, brown chicken thoroughly. About 8-10 minutes or until juices run clear. Do not drain off or remove from pan.
- Add Keilbasa, marsala cooking wine, spaghetti sauce, broccoli, red bell pepper, and scallions. Mix well.
- Bring to a boil, then boil for 5 minutes. Stirring occasionally. Cover with a lid and reduce heat to a simmer. Stirring occassionally. Simmer for 45 minutes or until chicken and broccoli are tender.
- Best if served over cooked rice.
