Shrimp And Spaghetti Squash

- 2 servings shopping list
- 1 medium squash, spaghetti shopping list
- 1 cup spinach, raw shopping list
- 2 tbsp parmesan cheese, grated shopping list
- 1 slice bread, Wheat Simply LIght pepperidge Farm shopping list
- 1 can stewed tomatoes, Del Monte shopping list
- 6 olives, pimiento Stuffed Green, halved shopping list
- 12 shrimp Tail-On Cooked Harvest Of The Sea shopping list
- 1 tsp italian seasonings shopping list
- salt to taste shopping list
- 1 tsp pepper shopping list
How to make it
- Wash the squash, cut it in half, scoop out the seeds. Place the halves flesh side down in a glass dish, put several slits in the gourd and microwave on high for 8 minutes.
- Put the stewed tomatoes and olives in a pot to simmer. You want to simmer off most of the water.
- Grate the slice of bread into crumbs.
- Mix in Parmesan, Italian seasonings, salt and pepper.
- Take the tails off the shrimp. Slice each shrimp in half lengthwise.
- Put the spinach in the pan with the tomatoes and saute it up till it is all wilted.
- Take the squash out and use a fork to pull out the strands. Scoop it good you are going to put the whole mess back into the gourd to bake.
- Toss the squash, tomato mix and shrimp. Make sure you don' t let the squash stay in clumps. Use a big fork and salad spoon to toss the stuff together so its nice and evenly distributed.
- Split the mixture into each half of the empty squash gourd.
- Sprinkle the bread crumb mixture on top.
- Put the squash into the preheated 375 oven for about 15 minutes to heat and brown up the crumbs.
