Peppermint Frosting

- 2 1/4 cups sugar shopping list
- 1/2 cup water shopping list
- 3 large egg whites shopping list
- 1 tablespoon light corn syrup shopping list
- 1/2 teaspoon pure peppermint extract shopping list
- chocolate curls to garnish cake, if desired shopping list
How to make it
- Combine sugar, water, egg whites and corn syrup in bowl of stand mixer.
- Whisk by hand to blend well.
- Set bowl over saucepan of gently simmering water.
- Whisk constantly by hand until mixture resembles marshmallow cream and ribbons form when whisk is lifted, about 8 to 9 minutes.
- Whisk in peppermint extract.
- Remove bowl from over water and place on stand mixer using whisk attachment.
- Beat on high speed until mixture is barely warm to touch and very thick, 7 to 8 minutes.
- Using offset spatula and working quickly, spread frosting over sides and top of cake.
- Sprinkle chocolate curls on top and sides, if desired.

This sounds wonderful I could even make some chocolate covered mint leaves as a decoration along with the chocolate curls.
