How to make it

  • Combine sugar, water, egg whites and corn syrup in bowl of stand mixer.
  • Whisk by hand to blend well.
  • Set bowl over saucepan of gently simmering water.
  • Whisk constantly by hand until mixture resembles marshmallow cream and ribbons form when whisk is lifted, about 8 to 9 minutes.
  • Whisk in peppermint extract.
  • Remove bowl from over water and place on stand mixer using whisk attachment.
  • Beat on high speed until mixture is barely warm to touch and very thick, 7 to 8 minutes.
  • Using offset spatula and working quickly, spread frosting over sides and top of cake.
  • Sprinkle chocolate curls on top and sides, if desired.

    OMG, michael! You are truly unbelievable! I can't even believe that you're going to do chocolate covered mint leaves! You are to die for and I want to to live with me! In lieu of leaving your wife, you could send me some mint leaves.. Thanks for your five, michael.

    Dorie's cookbook!! I LOVE that cookbook, and the cake on the cover looks so good - this peppermint frosting would be awesome on it...thanks, la - you're making me hungry again this morning!
