How to make it

  • Heat the vegetable stock in a pan.
  • Add the sugar snaps, spring onions,chili, tofu and soy sauce.
  • Simmer for 2 minutes.
  • Stir in soba noodles and heat through.
  • Serve in bowls and sprinkle with toasted sesame seeds.
  • You could always fry ginger and garlic with chili then add the vegetable stock and continue the process for a different flavour!
