Japanese-style broth

- 900ml vegetable stock shopping list
- 100g sugar snap peas (halved lengthways) shopping list
- 4 finely chopped spring onions shopping list
- 3x15ml spoons light soy sauce shopping list
- 75g cooked soba noodles shopping list
- 125g tofu, cubed shopping list
- toasted sesame seeds shopping list
- chili flakes (optional) to taste shopping list
How to make it
- Heat the vegetable stock in a pan.
- Add the sugar snaps, spring onions,chili, tofu and soy sauce.
- Simmer for 2 minutes.
- Stir in soba noodles and heat through.
- Serve in bowls and sprinkle with toasted sesame seeds.
- You could always fry ginger and garlic with chili then add the vegetable stock and continue the process for a different flavour!
