Red Velvet Cupakes

- For cupcakes: shopping list
- 2 1/2 cups cake flour shopping list
- 1 1/2 cups sugar shopping list
- 1 tsp baking soda shopping list
- Pinch of salt shopping list
- 3 tsp cocoa powder shopping list
- 1 cup vegetable oil shopping list
- 1 cup lowfat buttermilk shopping list
- 2 large eggs shopping list
- 4 tbs red dye shopping list
- 1 tsp white vinegar shopping list
- For frosting: shopping list
- 8oz cream cheese shopping list
- 1 stick butter shopping list
- 1 cup powdered sugar shopping list
- 2 tsp vanilla shopping list
- maraschino cherries shopping list
- Red sprinkles shopping list
How to make it
- Sift together the cake flour, sugar, baking soda, salt, and cocoa power in a bowl and set aside. In another bowl mix the wet ingredients; vegetable oil, buttermilk, vinegar, eggs, and red food coloring. Once the wet ingredients are mixed well mix in the dry ingredients a little at a bit, folding the wet ingredients over them until both bowls have been mixed together. Place in the oven at 350. I made these cupcakes quite large so they took 30 minutes, if you make smaller cupcakes then you will have to wait less time, around 20-22 minutes.
- For the frosting you beat together the cream cheese and butter until smooth and then slowly mix in the powdered sugar. You can use more powdered sugar if desired but I prefer my frosting to not be super sweet. Cut maraschino cherries in half and put them on top, add a dash of sprinkles. Voila!
