Ingredients

For cupcakes:

2 1/2 cups cake flour

1 1/2 cups sugar

1 tsp baking soda

Pinch of salt

3 tsp cocoa powder

1 cup vegetable oil

1 cup lowfat buttermilk

2 large eggs

4 tbs red dye

1 tsp white vinegar

For frosting:

8oz cream cheese

1 stick butter

1 cup powdered sugar

2 tsp vanilla

Maraschino cherries

Red sprinkles

Directions

Sift together the cake flour, sugar, baking soda, salt, and cocoa power in a bowl and set aside. In another bowl mix the wet ingredients; vegetable oil, buttermilk, vinegar, eggs, and red food coloring. Once the wet ingredients are mixed well mix in the dry ingredients a little at a bit, folding the wet ingredients over them until both bowls have been mixed together. Place in the oven at 350. I made these cupcakes quite large so they took 30 minutes, if you make smaller cupcakes then you will have to wait less time, around 20-22 minutes.

For the frosting you beat together the cream cheese and butter until smooth and then slowly mix in the powdered sugar. You can use more powdered sugar if desired but I prefer my frosting to not be super sweet. Cut maraschino cherries in half and put them on top, add a dash of sprinkles. Voila!
