How to make it

  • Sift together the cake flour, sugar, baking soda, salt, and cocoa power in a bowl and set aside. In another bowl mix the wet ingredients; vegetable oil, buttermilk, vinegar, eggs, and red food coloring. Once the wet ingredients are mixed well mix in the dry ingredients a little at a bit, folding the wet ingredients over them until both bowls have been mixed together. Place in the oven at 350. I made these cupcakes quite large so they took 30 minutes, if you make smaller cupcakes then you will have to wait less time, around 20-22 minutes.
  • For the frosting you beat together the cream cheese and butter until smooth and then slowly mix in the powdered sugar. You can use more powdered sugar if desired but I prefer my frosting to not be super sweet. Cut maraschino cherries in half and put them on top, add a dash of sprinkles. Voila!

    I'm not the biggest sweets/dessert fan (have to watch my waist line) but these sound really good. I think I'm going to make these real soon. And welcome to the group. Glad to have you as a friend. Looking forward to seeing some more of your recipes.
