The young baby eggplants cooked with tamarind.extract...it's spicy curry.goes perfectly with plain rice....

Ingredients
  • Young baby egg plants 4-5
  • Onion 1 chopped
  • Tomato 2 paste
  • 2 green chillies chopped
  • 1/2tsp turmeric powder
  • 1tsp chilly powder
  • 2tsp coriender powder
  • tamarind juice(lemon size tamarind soaked in warm water&extract juice)
  • coconut paste(optional)
  • Mustard seeds 1/2 tsp
  • fenugreek 1/2tsp
  • curry leaves
  • salt to taste

Directions
  1. Slit the egg plant lengthwise &fry in oil by adding some salt&keep aside
  2. In a pan,add oil,add the mustard seeds,fenugreek,curry leaf once they splutter
  3. Then add, the chopped onions,green chilly&fry till they turn golden brown
  4. Then add the chilly,turmeric,coriender powders&saute in the oil
  5. Add the tomato paste,cook till the oil is seperated from the gravy
  6. Now,add the fried eggplants&saute it
  7. Add the tamarind juice&coconut paste.allow it to cook for 5-10min
  8. Adjust the salt
  9. This can be served with rice&fried potatoes....
