Ingredients

1 pound fully cooked smoked kielbasa or polish sausage

1 can (15-1/2oz.) black-eyed peas, rinsed and drained

2 medium tart apples, cut into 1/2-inch thick chunks (no need to peel)

1 medium green or red pepper, chopped

4 large green onions, thinly sliced

DRESSING:

1/3 cup vegetable oil

3 Tbs. cider vinegar

1 Tbs. Dijon mustard

2 tsp. sugar

1/2 to 1 tsp. freshly ground pepper

Directions

Halve the sausage lengthwise and cut into 1/4-inch slices.

In a non-stick skillet, brown sausage and drain on paper towel.

In a bowl, combine peas, apples, green or red pepper, onions and sausage. Combine dressing ingredients in a small bowl; mix well and pour over sausage mixture. Toss to coat.

Cover and refrigerate for 4 hours or overnight.
