Kielbasa Summer Salad

- 1 pound fully cooked smoked kielbasa or Polish sausage shopping list
- 1 can (15-1/2oz.) black-eyed peas, rinsed and drained shopping list
- 2 medium tart apples, cut into 1/2-inch thick chunks (no need to peel) shopping list
- 1 medium green or red pepper, chopped shopping list
- 4 large green onions, thinly sliced shopping list
- DRESSING: shopping list
- 1/3 cup vegetable oil shopping list
- 3 Tbs. cider vinegar shopping list
- 1 Tbs. Dijon mustard shopping list
- 2 tsp. sugar shopping list
- 1/2 to 1 tsp. freshly ground pepper shopping list
How to make it
- Halve the sausage lengthwise and cut into 1/4-inch slices.
- In a non-stick skillet, brown sausage and drain on paper towel.
- In a bowl, combine peas, apples, green or red pepper, onions and sausage. Combine dressing ingredients in a small bowl; mix well and pour over sausage mixture. Toss to coat.
- Cover and refrigerate for 4 hours or overnight.
