SPICY MEXICAN BEAN BURGER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayes Estate in Mesquite, Texas in 1989.

Ingredients
  • 16 ounce can red kidney beans drained and rinsed
  • 1/2 small white onion coarsely chopped
  • 1/2 green bell pepper coarsely chopped
  • 1 carrot steamed and mashed
  • 1/8 cup chunky salsa
  • 1 cup bread crumbs
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/8 teaspoon chili powder

Directions
  1. Mix all ingredients together then form into balls and smash into patties.
  2. Bake at 450 for 20 minutes then serve on buns with lettuce, tomato and salsa.
