Sweet Potato Pineapple Bake Recipe

Ingredients

3 cups cooked mashed sweet potatoes

1/2 cup sugar

1/2 cup milk

1/4 cup butter-melted

2 eggs-lightly beaten

1 teaspoon vanilla extract

2 teaspoons pumpkin pie spice-or to taste

pinch of salt(omit if using salted butter)

Pineapple Topping:

1/4 cup sugar

1/4 cup all purpose flour

1 8oz can crushed pineapple-undrained

1/4 cup butter-melted

2 eggs

Directions

In a large bowl, combine the first eight ingredients. Mix well.

Pour into a lightly greased 9" square baking dish.

Combine topping ingredients.

Pour over potato mixture.

Bake uncovered at 350 degrees for 45-50 minutes or until knife inserted near center comes out clean.

Serve hot. Refrigerate leftovers.
