Chicken Pot Pie Pasta Recipe
Made this for dinner last night. Very kid friendly (except they all picked out the peas! - probably will omit them from the recipe next time!) Leftovers will freeze or are great for heating up at lunch time! Quick and easy, too!

Ingredients
  • 1 12-16 oz. pkg. rotini or bow tie pasta
  • 2 lbs boneless skinless chicken breasts, cubed
  • 1 red pepper, chopped
  • 1/4 cup butter
  • 2 10 3/4 oz. cans cream of chicken soup
  • 2 cups frozen peas, optional at our house!
  • 1 1/2 cups mlk
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 2/3 cup grated parmesan cheese

Directions
  1. Cook pasta according to pkg. directions
  2. Meanwhile, in a dutch oven, cook chicken and red pepper in melted butter over medium heat for about 10 minutes until chicken is cooked through.
  3. Stir in all remaining ingredients except parmesan cheese.
  4. Bring to a boil and simmer uncovered for about 5 minutes.
  5. Stir in parmesan cheese.
  6. Drain pasta and add to the chicken mixture, tossing to coat.
  7. enjoy!
