This is an Argentinian marinade most often used to dress thinly sliced grilled beef. It is also a great sauce to use to lightly coat potato wedges then bake.

Ingredients
  • Yields about 1 cup or 16 tbsp
  • 3/4 cup olive oil
  • 3 tbl red wine vinegar
  • 1/2 cup chopped onions
  • 2 tbl chopped garlic
  • 1/2 cup finely-chopped fresh parsley leaves
  • Crushed red pepper to taste
  • Salt to taste
  • 2 lb Argentinean beef flank or skirt steak
  • Sea salt to taste
  • Finely-ground black pepper to taste

Directions
  1. In a mixing bowl, whisk the olive oil and vinegar together. Add the onions, garlic, parsley and crushed red pepper. Whisk well. Season with salt. Cover and set aside for at least 2 hours at room temperature.
