How to make it

  • Grill the smoked sausage, drain
  • Get out your crock pot and pour in the chicken broth.
  • Add the celery, garlic, onion and curry
  • Halve then slice the cooked sausage
  • Pour in the dried mung beans
  • Add seasonings, close the lid and walk away for few hours.
  • I found that the mung beans were soaking up more liquid than I assumed it would. This made it into more of a stew than a soup so I added two cups of water after about an hour to thin it down.
  • Notes:
  • I used the Gadjar Raita Kari because it was leftover and needed some more loving. You can simply use a cup of sliced carrots then add some curry spices. The Gadjar Raita Kari has pineapple in it which will really add a sweet flavor to the soup.
