Split Mung Bean And Smoked Sausage Soup

- 2 links Smoked Applewurst sausage, New Braunfels Smokehouse shopping list
- 1 cup Gadjar Raita Kari (see my recipe) shopping list
- 1 cup split mung beans, dry shopping list
- 2 stalks celery, diced shopping list
- 1 cup onion, diced shopping list
- 2 cloves garlic, minced shopping list
- 4 cups chicken broth, free range organic Pacific Natural Foods shopping list
- 1 tsp chilli powder shopping list
- 1 bay leaf shopping list
- salt to taste shopping list
- 2 cups water if needed shopping list
How to make it
- Grill the smoked sausage, drain
- Get out your crock pot and pour in the chicken broth.
- Add the celery, garlic, onion and curry
- Halve then slice the cooked sausage
- Pour in the dried mung beans
- Add seasonings, close the lid and walk away for few hours.
- I found that the mung beans were soaking up more liquid than I assumed it would. This made it into more of a stew than a soup so I added two cups of water after about an hour to thin it down.
- Notes:
- I used the Gadjar Raita Kari because it was leftover and needed some more loving. You can simply use a cup of sliced carrots then add some curry spices. The Gadjar Raita Kari has pineapple in it which will really add a sweet flavor to the soup.

I agree with Julia. The applewurst will go great with the mung beans... This soup sounds really delicious... And your Agadjar-raita-karind sounds wonderful... I want to try this soup... saving to my box....;-)~~ Jim
