How to make it

  • toss sliced strawberries with the preserves and brown sugar until well coated.................
  • heat an 8 inch skillet over medium heat................
  • add butter and wait until it is bubbling , then whisk the eggs and pour into the skillet....................
  • cook until eggs are set on the bottom but still moist................
  • lift the edges gently with the spatula tilting pan to let uncooked eggs run under..............
  • sppon strawberry mixture over 1/2 of the eggs ..................
  • cook just until eggs fluff.................
  • remove from heat and sprinkle with coconut rum, fold omelet in half to enclose the filling and slide onto a serving plate
  • top with remaining strawberries , crushed almonds and shredded coconut
  • sprinkle with powdered sugar
  • makes one omelet................enjoy this tasty treat.................

    Coconut rum? Oh how decadent could an omelet ever be without it, I ask! I had a fruit omelet in Mystic, CT with a fruit and cream cheese filling. This sounds so much more pure! 5 5 5 5 Thanks.
