Strawberry Omelet

- 3 1/2- ounces fresh strawberries , sliced plus extra for topping shopping list
- 1- tablespoon strawberry preserves............ shopping list
- 1- teaspoon brown sugar shopping list
- 1- tablespoon butter shopping list
- 3- large eggs shopping list
- 1- teaspoon coconut rum shopping list
- crushed almonds shopping list
- shredded coconut shopping list
- powdered sugar shopping list
How to make it
- toss sliced strawberries with the preserves and brown sugar until well coated.................
- heat an 8 inch skillet over medium heat................
- add butter and wait until it is bubbling , then whisk the eggs and pour into the skillet....................
- cook until eggs are set on the bottom but still moist................
- lift the edges gently with the spatula tilting pan to let uncooked eggs run under..............
- sppon strawberry mixture over 1/2 of the eggs ..................
- cook just until eggs fluff.................
- remove from heat and sprinkle with coconut rum, fold omelet in half to enclose the filling and slide onto a serving plate
- top with remaining strawberries , crushed almonds and shredded coconut
- sprinkle with powdered sugar
- makes one omelet................enjoy this tasty treat.................

Coconut rum? Oh how decadent could an omelet ever be without it, I ask! I had a fruit omelet in Mystic, CT with a fruit and cream cheese filling. This sounds so much more pure! 5 5 5 5 Thanks.
