Ingredients
  • Game Loin
  • 4 Crushed Garlic Cloves
  • 30ml Olive Oil
  • 5 - 10ml Soya Sauce
  • 2 Lemons Juice
  • Lemon Zest
  • 250g Streaky Bacon
  • Salt (Course Crushed Prefebly)
  • Peper (Black Freshly Ground)
  • 2 Chillies Chopped (Optional)
  • Fresh Sweet Basil Chopped (Optional)

Directions
  1. Marinade meat in all the ingrediants except the bacon, peper and salt
  2. Turn every 60min
  3. When ready flavor with salt and peper to taste
  4. Wrap in bacon and secure bacon with tooth picks
  5. Barbeque over hot coles until done to taste
  6. (If you are adverturious you can stuff the loin with mushrooms, onions and sour cream)

I can't think of any game that would not taste good marinated in lemon, garlic, chile and soy.. Nice basic recipe... thanks for sharing.. jim

Hi Joyce

In South Africa we are spoilt with the abundance of game. This recipe I have used on various species to name a few Orix (Gemsbok) Black Wildebeest, Impala and Kudu. I like the bigger game species as you get more from the loin Impala is good but a bit on the small side
