OCHSENSCHWANZSUPPE OX Tail Soup

- 2 pounds ox tails, disjointed shopping list
- 1 medium onion, sliced shopping list
- 2 tablespoons vegetable oil shopping list
- 8 cups water shopping list
- 1 teaspoon salt shopping list
- 4 peppercorns shopping list
- 1/4 cup chopped parsley shopping list
- 1/2 cup diced carrots shopping list
- 1 cup diced celery shopping list
- 1 bay leaf shopping list
- 1/2 drained tomatoes shopping list
- 1 teaspoon dried thyme, crushed shopping list
- 1 tablespoon unbleached flour shopping list
- 1 tablespoon butter or margarine shopping list
- 1/4 cup Madeira shopping list
How to make it
- 1) In a 4-quart Dutch Oven brown ox tails and onion in hot oil for several minutes. Add water, salt and peppercorns; simmer uncovered for about 2 hours.
- 2) Cover and continue to simmer for 3 additional hours. Add the parsley, carrots, celery, bay leaf, tomatoes, and thyme; continue simmering for 30 minutes longer or until the vegetables are tender.
- 3) Strain stock and refrigerate for an hour or more. In a blender puree the edible meat and vegetables and reserve.
- 4) Remove fat from top of stock and reheat. In a large, dry frying pan brown flour over high heat. Cool slightly. Add the butter or margarine, blend. A little at a time, add the stock and vegetables. Correct seasoning and add Madeira just before serving.

I love ox-tail! Very expensive now but get it anyway. Very nice recipe. Ox-tail freaks people out? Last night I made sweet breads! Tripe is out of this world! But the secret is knowing how to cook it...right? Yep, come over anytime and bring the beer...more

Yep - oxtails used to be inexpensive...then everybody found out how good they are and the price went up! We haven't had them in such a long time. I bet this soup is great!! Thanks for posting. Added this to soups/stews group and a couple more....
