How to make it

  • 1) In a 4-quart Dutch Oven brown ox tails and onion in hot oil for several minutes. Add water, salt and peppercorns; simmer uncovered for about 2 hours.
  • 2) Cover and continue to simmer for 3 additional hours. Add the parsley, carrots, celery, bay leaf, tomatoes, and thyme; continue simmering for 30 minutes longer or until the vegetables are tender.
  • 3) Strain stock and refrigerate for an hour or more. In a blender puree the edible meat and vegetables and reserve.
  • 4) Remove fat from top of stock and reheat. In a large, dry frying pan brown flour over high heat. Cool slightly. Add the butter or margarine, blend. A little at a time, add the stock and vegetables. Correct seasoning and add Madeira just before serving.

    I love ox-tail! Very expensive now but get it anyway. Very nice recipe. Ox-tail freaks people out? Last night I made sweet breads! Tripe is out of this world! But the secret is knowing how to cook it...right? Yep, come over anytime and bring the beer.

    i love this soup, my alltime fave! so glad to hear others aren't freaked out by just the words ox tail! my friends wont try it just because of that...more for me!! =)

    Yep - oxtails used to be inexpensive...then everybody found out how good they are and the price went up! We haven't had them in such a long time. I bet this soup is great!! Thanks for posting. Added this to soups/stews group and a couple more....
