Sourdough Biscuits

- 1 c unbleached white flour shopping list
- 1/4 tsp baking soda shopping list
- 2 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1/2 c unsalted butter or vegetable shortening shopping list
- 1 c sourdough starter shopping list
- Melted butter shopping list
How to make it
- Sift together flour, soda, baking powder and salt.
- Cut in the batter or shortening with a pastry blender or two knives until coarsely textured and reasonably well distributed.
- Add the sourdough starter and mix gentlly.
- Turn the dough onto a lightly floured board and knead about 10 times.
- Pat the dough out into a rough rectangle and then roll it out with a rolling pin until it's about 1/2 inch thick.
- Cut into biscuits in shape/size desired and place on greased baking sheet. Re-form scraps and roll out again to make more biscuits.
- Cover and let rise about 30 minutes.
- Preheat the oven to 425F.
- Brush the tops of the biscuits with melted butter just before putting them in the oven.
- Bake 7-10 minutes.

Making the biscuits was easy. It made almost 20 biscuits which was nice. My only compliant was that the biscuits didn't rise like I thought they would and they were pretty dense. Still tasty just not quite what I was looking for.
