This wonderful-sounding recipe was contributed to allrecipes by Jeannie Duckworth. I'll be trying it soon. Four cups of cheese may be a tad much for one pound of ground beef... may adjust that!

Ingredients
  • 1 tablespoon olive oil
  • 1 small yellow onion, thinly sliced
  • 1 pound ground beef
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 pint heavy cream
  • Salt and pepper to taste
  • 5 potatoes, sliced
  • 2 cups shredded Cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 cup milk

Directions
  1. Preheat oven to 350 degrees F (175 C).
  2. Heat oil in large skillet over medium heat.
  3. Cook onions until translucent and set aside.
  4. Cook ground beef until evenly browned.
  5. Drain excess fat and set beef aside.
  6. Melt butter in the skillet.
  7. Add flour and stir with a whisk for 5 minutes.
  8. Gradually whisk in milk, then cream.
  9. Simmer, stirring frequently, over medium low heat for 10 minutes until sauce is thick and smooth.
  10. Spread small amount of sauce on bottom of 13x9" baking dish.
  11. Alternate layers of potatoes, onions, ground beef, cheese and sauce.
  12. Make 2 to 3 layers.
  13. Reserve some cheese to sprinkle on top.
  14. If you run short of sauce, press down on layers and add milk as needed.
  15. Sprinkle remaining cheese on top.
  16. Bake 45 to 55 minutes OR until potatoes are tender.

Alterations


EEKS! I'm making alterations to my own post..
I'd use a medium to large onion and chopped rather than sliced.
I'd either use more beef OR less cheese.
I'd add the sauce AFTER the layering process since then there is no danger of running out.
