Ingredients

How to make it

  • -cut eggplant into 1 inch strips and soak it in slightly salty (cold) water in a large bowl for 10 to 30 minutes while you internet surf (it doesn't matter much, your just getting the sap out of them wist making sure they don't turn brown)
  • -rinse and transfer to draining container
  • -meanwhile: chop shrimp, onion, smash garlic on flat side of knife and REALLY rough chop
  • -heat pan/wok on med-high, add shrimp till it turns brown(will be pungent and brown fast!)
  • -then add garlic and onion and saute until soft
  • -add eggplant and stir until slightly cooked
  • -add salt, sugar, soy and stir
  • -add a little water/chicken stock and cover for 10 mins
  • -serve with rice and the other main dishes
