Shrimpy Eggplant Stir-fry Recipe

Ingredients

1 whole eggplant or 3 long seedless asian variety

6 med. dried shrimp chopped

3 garlic cloves

1 small onion chopped

1 t salt

4 t sugar

4 t dark soy

4 t oil

1/4 c water/chicken stock(whichever you have)

cilantro and green onions for garnish (cut small)

Directions

-cut eggplant into 1 inch strips and soak it in slightly salty (cold) water in a large bowl for 10 to 30 minutes while you internet surf (it doesn't matter much, your just getting the sap out of them wist making sure they don't turn brown)

-rinse and transfer to draining container

-meanwhile: chop shrimp, onion, smash garlic on flat side of knife and REALLY rough chop

-heat pan/wok on med-high, add shrimp till it turns brown(will be pungent and brown fast!)

-then add garlic and onion and saute until soft

-add eggplant and stir until slightly cooked

-add salt, sugar, soy and stir

-add a little water/chicken stock and cover for 10 mins

-serve with rice and the other main dishes
