shrimpy eggplant stir-fry

- 1 whole eggplant or 3 long seedless asian variety shopping list
- 6 med. dried shrimp chopped shopping list
- 3 garlic cloves shopping list
- 1 small onion chopped shopping list
- 1 t salt shopping list
- 4 t sugar shopping list
- 4 t dark soy shopping list
- 4 t oil shopping list
- 1/4 c water/chicken stock(whichever you have) shopping list
- cilantro and green onions for garnish (cut small) shopping list
How to make it
- -cut eggplant into 1 inch strips and soak it in slightly salty (cold) water in a large bowl for 10 to 30 minutes while you internet surf (it doesn't matter much, your just getting the sap out of them wist making sure they don't turn brown)
- -rinse and transfer to draining container
- -meanwhile: chop shrimp, onion, smash garlic on flat side of knife and REALLY rough chop
- -heat pan/wok on med-high, add shrimp till it turns brown(will be pungent and brown fast!)
- -then add garlic and onion and saute until soft
- -add eggplant and stir until slightly cooked
- -add salt, sugar, soy and stir
- -add a little water/chicken stock and cover for 10 mins
- -serve with rice and the other main dishes
