this is an easy hot relish for all of you who like hot stuff

Ingredients
  • 2 qt hot peppers finely chopped
  • 2 tbs salt
  • 2 c sugar
  • 2c vinegar

Directions
  1. combine peppers and salt let stand 3-4 hrs
  2. add sugar and vinegar cook on low stirring frequently about 45 min
  3. pour into hot jars leaving 1/4 head space
  4. put on caps process 10 min in boiling water bath
  5. ......for not so hot relish use 1qt hot peppers and 1 qt sweet red peppers
