  • 3 cups of cornmeal
  • 1 tespoon bakeing pouder
  • 1/4 cup flour of your choic (regular or spelts,rice or cornstarch)
  • 1 can creamed corn
  • 1 can rotel tomatos ( mild or hot)
  • 2 1/2 cups of milk ( buttermilk or regular)
  • 1 cup cooked shrimp ( cut up if not the little one)
  • 1/2 cooked crab meat ( can use caned )
  • 2 cup frozen or fresh trenity or choped onion, 1/2 cup choped green and red peppers. 1 stalk celery ( this should come to 2 cups
  • 1 or 2 tespoon Tony Chanere's regular seasuning or more spice
  • 1 egg
  • Sauce for this :
  • your favorit alfrato sauce
  • 1/4 cup blinded up cooked shrimp and or crab meat with a dash of tonys .

Directions
  1. cook onion mix ture .
  2. stire dry ingredence in bowl. Add creamed corn . rotels tomatos. shrimp . crab meat. beated egg .cooked onions mixture and tonys
  3. stire in milk. If dry add little more milk. Put this mixture into a hot greased cast iorn skillet and bake at 400 for 40 mints. or till the tooth pick comes out clean.
  4. when done sirve with an alfrato sauce of your choice with blinded crab or shrimp and a dash of tonys . cook and serve on top.
  5. If you want it hoter add some cyanne pepper. you can also add hot sauce to the alfrato sauce but I let everyone add that for themselves.

I had to read this a couple of times to figure it out, but it actually is a good Cajun dish. For those of you not familiar with the term, The Holy Trinity of New Orleans cooking is green peppers, onions, and celery. All in all, this will turn out to be a very tasty dish. Cook it up, and "Laissez les bon temps rouler" (Let the good times roll.)
