How to make it

  • In a large frying pan add 2T. Olive oil ( Med-high Heat)
  • Add Spinach and stir so it all gets coated in the olive oil
  • It will shrink quite a bit but you can add more spinach to it as it shrinks and turns dark green
  • *You can use frozen or canned spinach as well but I find fresh cooked has the best flavour and aroma
  • Empty cooked spinach into large bowl and add cheese, onion, garlic powder, salt and pepper.
  • Preheat oven 350 degrees.
  • In a large baking pan grease the bottom with the butter.
  • Phyllo Dough: Un roll and fit two - three sheets into the bottom of a greased pan.
  • Brush it with butter several times
  • *I use a plastic knife to cut triangle shapes
  • Add mixture of Spinach
  • Add each remaining layer of phyllo and brush with butter between each layer.
  • Cook 40 -45 min.
  • Let cool ,then cut out shapes, and serve.
