Yellow Squash Gruyere And Sage Frittata

- 4-6 eggs shopping list
- 1 cup shredded gruyere cheese shopping list
- 1 large yellow squash chopped into small pieces shopping list
- 1 TBSP dry sage shopping list
- 2 large cloves garlic - minced shopping list
- 1 TBSP butter shopping list
- 1TBSP olive oil shopping list
- * NOT extra virgin-you what mild flavour here-if you only have extra virgin then just double the amount of butter and skip the oil shopping list
- salt and pepper to taste shopping list
How to make it
- Heat the oil and melt the butter in a nonstick medium sized skillet over medium heat.
- Add the garlic and quickly saute to release the flavour.
- Add the squash and stir well.
- Cover and let cook until squash softens and becomes translucent(about 5-7 minutes)-stirring ocassionally.
- Add sage to squash and stir thoroughly.
- In a large bowl, beat eggs well and mix in shredded cheese.
- Quickly pour cheese/egg mixture over veggies and stir to get eggs cooking evenly.
- Keep pressing down on eggs with a spatula until they start to set on the bottom and you see a bit of smoke-this means the bottom is starting to brown.
- Invert fritatta onto a plate and slide back into pan to cook the other side.
- Cook for another 3-5 minutes- until you see smoke again.
- Cut into slices and serve.
