How to make it

  • Heat the oil and melt the butter in a nonstick medium sized skillet over medium heat.
  • Add the garlic and quickly saute to release the flavour.
  • Add the squash and stir well.
  • Cover and let cook until squash softens and becomes translucent(about 5-7 minutes)-stirring ocassionally.
  • Add sage to squash and stir thoroughly.
  • In a large bowl, beat eggs well and mix in shredded cheese.
  • Quickly pour cheese/egg mixture over veggies and stir to get eggs cooking evenly.
  • Keep pressing down on eggs with a spatula until they start to set on the bottom and you see a bit of smoke-this means the bottom is starting to brown.
  • Invert fritatta onto a plate and slide back into pan to cook the other side.
  • Cook for another 3-5 minutes- until you see smoke again.
  • Cut into slices and serve.
