Ingredients
  • 4-6 eggs
  • 1 cup shredded gruyere cheese
  • 1 large yellow squash chopped into small pieces
  • 1 TBSP dry sage
  • 2 large cloves garlic - minced
  • 1 TBSP butter
  • 1TBSP olive oil
  • * NOT extra virgin-you what mild flavour here-if you only have extra virgin then just double the amount of butter and skip the oil
  • salt and pepper to taste

Directions
  1. Heat the oil and melt the butter in a nonstick medium sized skillet over medium heat.
  2. Add the garlic and quickly saute to release the flavour.
  3. Add the squash and stir well.
  4. Cover and let cook until squash softens and becomes translucent(about 5-7 minutes)-stirring ocassionally.
  5. Add sage to squash and stir thoroughly.
  6. In a large bowl, beat eggs well and mix in shredded cheese.
  7. Quickly pour cheese/egg mixture over veggies and stir to get eggs cooking evenly.
  8. Keep pressing down on eggs with a spatula until they start to set on the bottom and you see a bit of smoke-this means the bottom is starting to brown.
  9. Invert fritatta onto a plate and slide back into pan to cook the other side.
  10. Cook for another 3-5 minutes- until you see smoke again.
  11. Cut into slices and serve.
