Cajun Chicken Cacciatore

- 2 pounds boneless chicken breast 1 1/2 cup flour shopping list
- 1/2 cup olive oil 1 onion chopped fine shopping list
- 1 bell pepper chopped 2-3 cloves of garlic minced fine shopping list
- 2 cans chicken broth 1 can 16 oz stewed tomatoes with onion and sweet pepper shopping list
- 1 can 8 oz tomato sauce 1 can 6 ox can tomato paste shopping list
- 1 can 8 oz mushrooms 1/2 tsp dried basil shopping list
- 2 bay leaves salt, black pepper, red pepper, garlic powder shopping list
- fettuccini noodles parmesan cheese shopping list
How to make it
- Season chicken breasts and (cut into strips).Dredge in the 1½ cup flour (seasoned to taste). Brown in olive oil, and remove to a paper toweled plate. Add remaining flour to oil and lightly brown similar to a roux. Add onions, bell pepper, and garlic and simmer until wilted. Add stewed tomatoes, tomato paste, tomato sauce, and mushrooms. Replace chicken add chicken broth, basil, and bay leaves.
- Season to taste with salt, black pepper, red pepper, and garlic powder. Cover and simmer about one half hour; stir occasionally.
