How to make it

  • Season chicken breasts and (cut into strips).Dredge in the 1½ cup flour (seasoned to taste). Brown in olive oil, and remove to a paper toweled plate. Add remaining flour to oil and lightly brown similar to a roux. Add onions, bell pepper, and garlic and simmer until wilted. Add stewed tomatoes, tomato paste, tomato sauce, and mushrooms. Replace chicken add chicken broth, basil, and bay leaves.
  • Season to taste with salt, black pepper, red pepper, and garlic powder. Cover and simmer about one half hour; stir occasionally.
