Herb-crusted Beef Roast

- 1 (2 to 3 lb) beef rump roast shopping list
- 1/4 cup chopped fresh parsley shopping list
- 1/4 cup chopped fresh oregano leaves shopping list
- 1/2 tsp. dried rosemary leaves shopping list
- 1 tsp. prepared minced garlic shopping list
- 1 Tbsp. oil shopping list
- 6 slices thick-cut bacon shopping list
How to make it
- Rub roast with salt and pepper.
- In a small bowl, combine parsley, oregano, rosemary, garlic and oil and press mixture on top and sides of roast.
- Place roast in a slow cooker.
- Place bacon over top of the beef and tuck ends under the bottom.
- Cover and cook on low for 6 to 8 hours or tender and done
