Ingredients
  • About 5 pounds of Buffalo stew meat
  • 10 potatoes, peeled and cubed
  • 5 carrots, peeled and sliced
  • 1 bunch of celery, chopped
  • 2 large onions, coursely chopped
  • 1 teaspoon garlic salt
  • 5 tablespoons of beef boullion granules
  • 8 teaspoons dried basil
  • 5 teaspoons dried oregano
  • 2 to 3 tablespoons of salt
  • 2 to 3 tablespoons of ground black pepper
  • 4 bay leaves
  • 1 large can of diced tomatoes,
  • 1 box of Quaker Barley

Directions
  1. Boil the potatoes, carrots and celery for 10 minutes in about 2 quarts of water.
  2. Add all of the other ingredients and cook in a large roaster for 6 to 8 hours.
  3. Add the barley during the last 3 hours of cooking.
  4. NOTES-As you can see, it makes A LOT. I think you can substitute beef stew meat, if buffalo meat is unavailable. Check the stew from time to time and add a little water if it seems like it's cooking away too much.

I am intrigued by the idea of buffalo stew but I don't think there's much chance of me getting hold of any in Scotland! I am pretty sure I could use beef (or even venison?) instead and it would still be delicious. Barley is so good for you but tastes so good you'd never know!! Thanks for posting. Cheers


I am sure you could substitute a lean cut of beef in place of the buffalo. Buffalo (american bison) is naturally lean and does taste a lot like beef.

I suppose you could use venison too. The long cooking time would work well with venison.
