How to make it

  • Boil the potatoes, carrots and celery for 10 minutes in about 2 quarts of water.
  • Add all of the other ingredients and cook in a large roaster for 6 to 8 hours.
  • Add the barley during the last 3 hours of cooking.
  • NOTES-As you can see, it makes A LOT. I think you can substitute beef stew meat, if buffalo meat is unavailable. Check the stew from time to time and add a little water if it seems like it's cooking away too much.

    I am sure you could substitute a lean cut of beef in place of the buffalo. Buffalo (american bison) is naturally lean and does taste a lot like beef.

    I suppose you could use venison too. The long cooking time would work well with venison.

    I am intrigued by the idea of buffalo stew but I don't think there's much chance of me getting hold of any in Scotland! I am pretty sure I could use beef (or even venison?) instead and it would still be delicious. Barley is so good for you but tastes so good you'd never know!! Thanks for posting. Cheers
