I love eating canned salmon in sandwiches and salads. Adding a soft boiled egg it seems to make the fishiness go away. Not to mention is very tasty!

Ingredients
  • 1 can sockeye salmon (106 g)
  • 1 egg, soft boiled and shelled
  • 1 tsp cilantros, chopped
  • 2 tsp mayonaisse
  • 1 tsp mustard
  • 1/4 fresh cracked pepper

Directions
  1. Drain salmon and add to chopped eggs.
  2. Add remaining ingredients and mash together.
  3. Serve over texas toast or your favourite salad greens.

Hey kid,

This is certainly on my list for the week; the cilantro, mustard (I think I'll use Dijon) and pepper sound like a nice balance with the egg :-) I also like it because it's quick and easy -- great for lunch!
