A winner every time. Juicy,tender chicken with just enough sauce to be a delicious topper for potatoes,rice or pasta.

Ingredients
  • 1 fryer chicken(cut-up) or 4 split chicken breast pieces with bone in or boneless/skinless breasts
  • 1/4c flour
  • 3Tbs olive oil
  • 1 onion,sliced in rings
  • 1c boiling water
  • Marinade:
  • 1/3c soy sauce
  • 1 lemon,juice of
  • 1tsp. poultry seasoning
  • 1/2tsp salt
  • 1tsp powdered ginger

Directions
  1. Combine all the marinade ingredients. Add chicken pieces to marinade and marinate for about 30 mins. Preheat oven to 350. Remove chicken from marinade(reserve marinsade),roll chicken pieces lightly in flour, and brown in olive oil until slightly browned on the outside.
  2. In a covered roaster,put a thin layer of onion rings,top with chicken pieces,all the marinade and 1c boiling water. Coveer tightly and bake at 350 for about 40 mins or till tender(20 mins for boneless/skinless breasts.
