How to make it

  • Preheat your oven while you're assembling the pan for the oven.
  • Combine all the ingredients and put the chicken on top and cover in a very large skillet/pan and bake for an hour or more.
  • Basically, bake until the rice is nice and flaky and done and the chicken is cooked.
  • Also, you can vary the vegetables to what you like, what is in season and change it any way you like.
  • I'm going to upload this before something happens to it again..

    For any of you dieters this is a filling dish and it is lower in fat but still has a richness to it.
    So, if I would have had more veggies on hand I would have added them to it. It increases the fiber and makes the dish look prettier in the end.
    Broccoli or red, yellow, or green bell peppers are good additions.
