~Mountain Oysters~Cowboy Caviar~Calf Fries ~Prairie Oysters~ What every you want to call these Western Delicacies of genitalia,if you've every been around a Ranch or Farm the likely-hood you have had these.

Ingredients
  • Several Calf Cuts(Mountain Oysters)
  • Place in a bowl of about 3/4 cup sugar,and 3/4 Cup Salt,water to cover completey.Set for about 1 hour.
  • Drain ,and rinse,place in bowl,cover completely with milk.Set for about 1 hour.
  • Drain,and rinse.
  • Grandma ,as I recall never boiled the mountain oysters before frying~but~I have eaten some that has been.If you choose this,just make sure you don't boil them to long,about 5 mintues or so,ice them down,then dip in egg,milk,flour,cornmeal,salt and pepper~ fry.
  • Slice each Oyster in about 1/2" slices.
  • In bowl beat a couple of farm eggs and a little fresh cows milk,dip oysters in egg and milk mixture.
  • Combine flour and a small about of cornmeal,pinch of black pepper and salt,place egg drenched testicles in flour mixture.
  • Fry~making sure NOT to over cook,in hot oil about 4 or 5 minutes should do.
  • Note:~ Please don't be squeamish~ If you did'nt know where they came from,you would probably think these quite good.

These are actually very tasty - ate them when we lived in Denver and they were often on the pub menus...good stuff!
