How to make it

  • In a large bowl, mix peanut oil, soy sauce and honey
  • Add chopped chicken breast to honey mixture, cover and put in refrigerator for two hours
  • In the meantime, chop garlic and onions, set aside
  • Chop mango and cashews, set aside
  • After chicken has marinated, put last tbsp of oil into pan
  • Sauteed garlic and onions until soft, about two to three minutes
  • Add chicken, marinade juices and bamboo shots, stirring occasionally until chicken is browned and cooked thoroughly, approximately ten minutes.
  • Stir in mango and cashews and cook until heated through, approximately two minutes.
  • Serve immediately over Sesame Rice
