Cashew Mango Chicken

- 5 tbsp peanut oil (4 for marinade and 1 for cooking) shopping list
- 4 tbsp soy sauce shopping list
- 3 tbsp honey shopping list
- 2 tbsp sesame seeds, toasted shopping list
- 6 boneless, skinless chicken breasts, cut into 1-inch cubes shopping list
- 1/4 cup salted cashews, chopped shopping list
- 3 medium garlic cloves, thinly sliced shopping list
- 1/4 medium yellow onion, chopped (about 1/4 cup) shopping list
- 1 medium mango, chopped (about 1 cup) shopping list
- 1 8oz can of bamboo shots shopping list
How to make it
- In a large bowl, mix peanut oil, soy sauce and honey
- Add chopped chicken breast to honey mixture, cover and put in refrigerator for two hours
- In the meantime, chop garlic and onions, set aside
- Chop mango and cashews, set aside
- After chicken has marinated, put last tbsp of oil into pan
- Sauteed garlic and onions until soft, about two to three minutes
- Add chicken, marinade juices and bamboo shots, stirring occasionally until chicken is browned and cooked thoroughly, approximately ten minutes.
- Stir in mango and cashews and cook until heated through, approximately two minutes.
- Serve immediately over Sesame Rice
