- 1/2 to whole head of spring cabbage - chopped (or bunch of kale if preferred) shopping list
- 1 small onion - chopped shopping list
- 2-3 lbs. baking or gold potatoes - peeled and diced into chunks shopping list
- 2-4 ounces of margarine or butter shopping list
- milk or soymilk shopping list
- salt and pepper to taste shopping list
How to make it
- Cut up all vegetables and place potatoes at the bottom of a pot. Sprinkle with salt and pepper.
- Layer cabbage/kale and onion on top of potatoes and fill pot with water until it covers the top.
- Bring to a boil and then simmer for 15-20 minutes until potatoes are tender.
- Mash everything with milk and margarine until it is the consistency of slightly runny mashed potatoes (feel free to play with the consistency by adding more milk). I like to leave a few chunks of potatoes and cabbage for texture and taste. Flavor with salt and pepper to taste.
- This recipe can be easily veganized by using margarine (not butter) and using soymilk in place of milk (Silk brand plain soymilk is especially good for this recipe).
- Serve on the side of veggie sausages for an extra special vegetarian treat. Great for the carnivores out there, too!
