Ingredients

1/2 to whole head of spring cabbage - chopped (or bunch of kale if preferred)

1 small onion - chopped

2-3 lbs. baking or gold potatoes - peeled and diced into chunks

2-4 ounces of margarine or butter

Milk or soymilk

salt and pepper to taste

Directions

Cut up all vegetables and place potatoes at the bottom of a pot. Sprinkle with salt and pepper.

Layer cabbage/kale and onion on top of potatoes and fill pot with water until it covers the top.

Bring to a boil and then simmer for 15-20 minutes until potatoes are tender.

Mash everything with milk and margarine until it is the consistency of slightly runny mashed potatoes (feel free to play with the consistency by adding more milk). I like to leave a few chunks of potatoes and cabbage for texture and taste. Flavor with salt and pepper to taste.

This recipe can be easily veganized by using margarine (not butter) and using soymilk in place of milk (Silk brand plain soymilk is especially good for this recipe).

Serve on the side of veggie sausages for an extra special vegetarian treat. Great for the carnivores out there, too!
