Rum Raisin Cheesecake

- 1/2 cup graham cracker crumbs shopping list
- 1/2 cup granulated sugar shopping list
- 1/2 cup margarine melted shopping list
- Batter: shopping list
- 1 pint water shopping list
- 1 cup raisins shopping list
- 2 pounds cream cheese softened shopping list
- 1/2 cup granulated sugar shopping list
- 3 tablespoons white rum shopping list
- 1 teaspoon dark vanilla shopping list
- 1 teaspoon salt shopping list
- 4 eggs shopping list
- 1 egg yolk shopping list
- Topping: shopping list
- 1 pint sour cream shopping list
- 1/4 cup granulated sugar shopping list
- 1 teaspoon white rum shopping list
How to make it
- Combine graham cracker crumbs, sugar and melted margarine until well blended.
- Press evenly into a 10” cake pan.
- Plump raisins in water add cream cheese and sugar and mix with paddle until softened.
- Add rum, vanilla and salt then mix well.
- Add eggs one at a time then and egg yolk mixing on low speed until blended through.
- Drain and add raisins and mix on low speed until just incorporated.
- Bake at 350 for 45 minutes then remove and allow to cool.
- Combine sour cream, sugar and rum then spread over cheesecake and chill for service.
