Lemon Delight Cheesecake

- 1-1/2 cups graham cracker crumbs shopping list
- 1/2 cup margarine melted shopping list
- 1/3 cup cold water shopping list
- 3 large eggs separated shopping list
- 1 teaspoon grated lemon peel shopping list
- 1/4 cup granulated sugar shopping list
- 1 envelope unflavored gelatin shopping list
- 1/3 cup lemon juice shopping list
- 1/2 cup sugar shopping list
- 16 ounces cream cheese softened shopping list
How to make it
- Combine crumbs, sugar and margarine and reserve 1/2 cup.
- Press remaining onto bottom of spring form pan.
- Soften gelatin in water then stir over low heat until dissolved.
- Add juice, egg yolks, 1/4 cup sugar and peel.
- Cook stirring constantly over medium heat for 5 minutes.
- Gradually add to cream cheese mixing at medium speed until well blended.
- Beat whites until foamy then gradually add remaining sugar and beat until peaks form.
- Fold into cream cheese mixture then pour over crust and top with reserved crumbs.
- Chill until firm.
