Ravioli In Pinon Cream Sauce Recipe
A very easy but elegant dish. Great with a salad, a nice Italian bread and a glass of white wine.

Ingredients
  • 1 package (1 lb) meat-stuffed ravioli
  • 1 cup pinon nuts
  • 1 1/4 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 Tbsp parsley, finely chopped

Directions
  1. In a large pot of boiling salted water, cook the ravioli according to package directions just until tender but still firm, about 7 minutes.
  2. Place the pinons in a food processor and process until they are finely ground.
  3. Heat the cream in a saucepan. Stir in the ground pinons and Parmesan cheese. Heat through, being careful that the cream doesn't boil.
  4. When the ravioli are done, drain off the water and pour them into a serving bowl. Pour the sauce over the ravioli and sprinkle on the parsley. Serve immediately.
