How to make it

  • In a large pot of boiling salted water, cook the ravioli according to package directions just until tender but still firm, about 7 minutes.
  • Place the pinons in a food processor and process until they are finely ground.
  • Heat the cream in a saucepan. Stir in the ground pinons and Parmesan cheese. Heat through, being careful that the cream doesn't boil.
  • When the ravioli are done, drain off the water and pour them into a serving bowl. Pour the sauce over the ravioli and sprinkle on the parsley. Serve immediately.
