Bell Pepper Chicken and Rice

- 4 boneless chicken breast, cut into 1/4 inch cubes shopping list
- 2 bell peppers, One Green, One Red or Yellow (for color) shopping list
- 5 or 6 roma tomatoes, diced shopping list
- 1/4 white onion shopping list
- 1/4 red onion shopping list
- 6 cloves garlic, chopped shopping list
- 1 tbsp white wine vinegar shopping list
- 2 tbsp fresh parsley, chopped shopping list
- 1 cube chicken bouillon (Knorr) shopping list
- 1/4 c butter shopping list
- 1 tbsp olive oil shopping list
- salt and pepper to taste shopping list
- 4 c brown rice, cooked shopping list
How to make it
- Cut chicken and set aside
- Chop Peppers, Onions and Garlic
- In large pan, sauteed onions and garlic in olive oil
- add Tomatoes and peppers, cook on low until softened but not mushy
- add the rest of the ingredients, including the chicken, cover and cook until chicken is completely cooked
- Salt and Pepper to taste and serve over rice
